课程描述:

食品加工与开发实验主要通过实践操作学习饮料、乳制品、肉制品、水产品等食品的制作工艺流程、品质评价,通过本课程的学习,提高专业实验技能。通过本课程学习,完成食品工艺课堂教学所涉及的肉制品、饮料、乳品和焙烤食品的实验室制作,最终达到能独立制定某一产品的工艺流程,完成产品试制的目的,培养学生严谨的科学态度和良好的实验习惯,掌握规范的操作方法和正确的数据处理方式。

  Experiments of food processing and development mainly focus on learning the production process and quality evaluation of beverages, dairy products, meat products, aquatic products, and other food products through practical operations. Through the study of this course, professional experimental skills can be improved. Through this course, students will complete the laboratory production of meat products, beverages, dairy products, and baked goods involved in food technology classroom teaching, ultimately achieving the goal of independently developing the process flow of a certain product, completing product trial production, cultivating a rigorous scientific attitude and good experimental habits, mastering standardized operating methods and correct data processing methods.
